OUR RESTAURANT IN NÖRTEN HARDENBERG

We warmly welcome you to our Novalis restaurant on your culinary journey through the region. Inspired by the surrounding Hardenberg estates, chef Florian Rabbethge creates innovative seasonal menus from regional ingredients. You can expect incredible dishes with game from our own hunt, Leinetal smoked fish or a completely vegetarian menu with products that we obtain directly from the farmer in the neighboring village. 

But the Novalis restaurant is not only a culinary destination for the evening. Start your day with select delicacies from our diverse Hardenberg breakfast buffet. In addition, our team will spoil you with lovingly prepared pancakes, fresh egg dishes or hearty boar sausages from our own country estate.

The restaurant Novalis was awarded for the year 2025 with 85 points by the Falstaff Hotel Guide and is among the 500 best gourmet restaurants in Germany.

Based on a gourmet restaurant, the dishes of Restaurant Novalis in Lower Saxony evoke a fine dining feeling without rigid etiquette and extravagant service. With us you can enjoy your dinner in a relaxed atmosphere & warm-family service. Additionally, we also offer a small Novalis menu for lunch. Try our regional hunting specialities or let yourself be surprised by the vegetarian menu.

Our Novalis service team brings the dishes to the table with a lot of charm and zest for life – and is happy to recommend the right wine or digestif for the finish. Atmosphere like in a gourmet restaurant, but down-to-earth as we like it in Lower Saxony.
